These days, being part of the mobile food movement (aka: fancy roach coaches) is kind of like being on Facebook; everybody’s doing it. What Kogi began is now the biggest food trend to hit Los Angeles since Spicy Tuna Tartar. With Umami’s truck mere moments from launch, Chef Ryan Harkins and Matthew Chernus, best friends since childhood, are gearing up to go head-to-head with their own gourmet burger truck, Grill ‘Em All. Forged out of friendship, a shared love of heavy metal and some major grilling chops, Harkins and Chernus are aiming for a December 15th launch. Though exact parking locations have yet to be decided, the guys can’t wait to share their exotic creations.
“The Molly Hatchet [Burger] is probably the most fantastic thing I have ever eaten,” Chernus contends about their offering of patty, seared fennel sausage gravy, bacon and a maple syrup drizzle. “The tator tots are sick too,” he continues. Unlike your usual cafeteria lunch filler, Grill 'Em All's tots, called H-100’s, are hand-made, cheddar and jack cheese-filled, and panko crusted. For Harkins, the Dee Snyder is his burger of choice. “It’s peanut butter and jelly with bacon, on a burger! The only way I could love this burger more would be to somehow include pizza.”
Given their love of metal, I wondered, if their truck had a single rock anthem, one that played like the ice cream truck theme heralding its arrival, what song would it be? "Blood and Thunder' by Mastodon," Harkins decrees. "It’s a triumphant battle song." "Angel of Death' by Slayer, for sure," Chernus counters. "Although it might make most people flee in terror.” Despite their too-much-rock-for-one-hand image, Harkins and Chernus show a softer side when asked what one condiment no burger can be served without.
“Love,” they agree.
