On April 8th, rare 120º was added to the Hard Rock Hotel and Casino's arsenal of luxury offerings. rare 120º is a spin on the modern steakhouse wedding a warm ambiance with a cutting edge environment. With living wallpaper, graffiti'd chairs, exotic wood finishes and stainless steel it's tough to remember that you just walked into a steakhouse. But this is Las Vegas and rare 120º shouldn't be compared to the Sizzler in Boonville, NC anyways.

If you don't become overly mesmerized by the living wallpaper - an ever-changing screen of images and designs you might find yourself in a tizzy over the menu. With a wall house hosting a bevy of organic wines and classic American vintages and a menu that boasts reinvented steakhouse favorites, you should probably tell your waiter to come back in ten minutes while you make up your mind. Chef Jon Snyder is serving up cold, crisp, hot, surf, turf and sides menus offering guests a varied selection from both land and sea.

The “cold” menu offers a selection of fresh seafoods and meats – from the over-the-top Seafood Platter which includes Maine lobster, Alaskan crab, black Tiger Shrimp and Blue Point Oysters, seasonally; to the classic Kobe Beef Carpaccio decorated with truffle, parmesan and arugula. The “hot” menu items offer fun options, perfect for sharing. One of the most exciting standouts: Surf & Turf Lollipops – with cubes of Filet Mignon, Jumbo Asparagus, Alaskan Crab with a red wine demiglace and béarnaise sauce.

Under the “surf” and “turf” portions of the menu at rare 120º, many fresh fish and shellfish options compliment the large selection of beef, lamb and chicken. Six cuts of beef are offered –the Filet Mignon (offered in two sizes: 10oz and 6oz), New York Strip, Kobe Flat Iron, the bone-in Rib eye, and a “Rare” Steak Trip for two, which includes a piece of Filet Mignon, New York Strip, and Kobe Flat Iron. Finish off your meal with Chocolate Fondue served with long stem strawberries, homemade marshmallows, rice krispy treats, donut holes, berry skewers and coconut macaroons or opt for rare 120º's modern twist on the Ice Cream Sandwich.
