Sage Restaurant is the newest dark and sexy restaurant to join the line up at the new Aria Resort and Casino inside City Center. Set in a modern yet luxurious environment, Sage boasts a contemporary menu by celebrated Executive Chef Shawn McClain. The focus here is on artisanal meats, sustainable seafood and fresh, seasonal produce from neighboring California and the Pacific coast. MCLain says, “Interesting and great-tasting is the key. For starters you can’t miss out on the Waygu Beef Tartare with crushed capers aioli, slow poached egg and pickled mustard seeds with crispy chocolate. If tartare doesn’t tickle your fancy, try the Butternut Squash and Heirloom Apple Soup with Pancetta, crispy cranberry-walnut bread and Point Reyes blue cheese. The fresh, sweet flavors will make your mouth water with delight. The signature main dishes are Foie Gras Custard Brulé topped with crusted caramelized citrus and cocoa nibs, Charred Baby Octopus Caponata, and the Roasted Scallops with braised oxtail and wild mushrooms will definitely appeal to your taste buds with an explosion of flavor. For those of you who don’t eat meat, Sage offers Vegetarian Options as well. From their Hawaiian Hearts of Palm Salad with Heirloom Apples, Crispy Potato Roesti, Horseradish Cream and Red Onion Jam to the Sunchoke and Salsify Tortellini with Medjool Dates, Cara Cara Orange, Hazelnuts and Brown Butter Rapini, there is something for everyone in your party to crave.

Cocktails at Sage are reminiscent of the past, focusing on classic American cocktails with a contemporary edge through natural ingredients and limited-production boutique liquors. The Sazerac is one of the specialties mixed with Sazerac rye whiskey, Peychaud bitters and Marilyn Manson absinthe. That’s right, absinthe, a spirit legalized in 2007 in the U.S., is on the menu with some specialty drinks being made right at your table. The wine list by Wine Director Rob Bigelow spans an impressive range, from domestic and international to boutique and widely established wines.
